Ingredients

  • 1/2 tsp dried whole basil
  • 1/2 tsp dried whole marjoram
  • 1/4 tsp dried whole tarragon
  • 1/2 tsp dried whole thyme
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 1 lb turkey breast cutlets
  • vegetable cooking spray
  • 4 tsp olive oil
  • 4 large cloves garlic
  • 4 Tbsp all-purpose flour
  • 2/3 cup canned low-sodium chicken broth
  • 4 Tbsp fresh lemon juice
  • 1 tsp grated lemon rind

Instructions

  1. Combine dried basil, marjoram, tarragon, thyme, salt, and pepper; sprinkle over both sides of turkey cutlets and set aside.
  2. Spray a large skillet with vegetable cooking spray and heat over medium-high heat.
  3. Add the turkey cutlets to the skillet and cook for about 3-4 minutes per side until browned and cooked through. Remove and set aside.
  4. In the same skillet, add olive oil and minced garlic; cook until fragrant, about 30 seconds.
  5. Stir in flour and cook for 1 minute.
  6. Gradually whisk in chicken broth, scraping up any browned bits from the bottom of the skillet.
  7. Bring to a simmer and cook until slightly thickened, about 2-3 minutes.
  8. Stir in lemon juice and lemon rind; return turkey to the skillet to heat through.
  9. Serve hot, garnished with extra lemon if desired.
