Ingredients

  • 18 oz. reduced fat yellow cake mix
  • 1 1/2 cups prepared lemonade
  • 2 eggs
  • 1 teaspoon grated lemon zest (optional)

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, combine the cake mix, prepared lemonade, eggs or liquid egg substitute, and lemon zest if desired.
  3. Beat on low speed for 1 minute, scraping the bowl often.
  4. Then, beat on medium speed for 2 minutes.
  5. Pour the batter into a greased or parchment-lined baking pan.
  6. Bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.
