Ingredients

  • 1 1/2 cups thinly sliced lemons, tightly packed
  • 1 cup thinly sliced lemon rind
  • 6 cups water
  • 4 cups granulated sugar

Instructions

  1. Remove any seeds from the lemons and discard end pieces.
  2. In a large heavy saucepan, combine the sliced lemons, lemon rind, and water. Bring to a boil.
  3. Boil rapidly, uncovered, for 30 minutes.
  4. Stir in sugar and cook rapidly, uncovered, for another 30 minutes.
  5. Place a small amount of the mixture on a spoon and cool slightly.
  6. Check the consistency: it should 'sheet' from the spoon or drop off as a single drop. Using a candy thermometer, it should read 228°F when ready.
  7. Cool for 5 minutes.
  8. Pour the marmalade into sterilized jars and seal with lids or paraffin, ensuring the marmalade has cooled to the setting point before sealing.
