A refreshing Middle Eastern salad combining fresh parsley, tomatoes, green onions, and bulghur wheat, with lemon and mint, perfect for light meals or side dishes.

Ingredients

  • 1 bunch parsley
  • 3 ripe tomatoes
  • 3 green onions
  • 1 tsp dried mint
  • 1 cup bulghur wheat
  • juice of 1/2 lemon
  • olive oil
  • salt

Instructions

  1. Soak bulghur wheat in 2 cups of warm water for 1/2 hour.
  2. Chop parsley, green onions, and tomatoes.
  3. Pour excess water from the wheat.
  4. Combine all ingredients in a large bowl.
  5. Refrigerate several hours or overnight.
  6. Serve on lettuce leaves or stuffed in pita pockets.
