Ingredients

  • 2 lb. fresh green beans
  • 3 qt. water
  • 1/2 c. finely chopped green onions
  • 1/3 c. olive oil
  • 1/4 c. chopped fresh parsley
  • 1/4 c. cider vinegar
  • 1/4 c. chopped fresh dill
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 c. coarsely chopped toasted walnuts

Instructions

  1. Wash green beans and trim the ends.
  2. Bring water to a boil in a pan; add green beans and cook for 10 minutes or until tender; drain.
  3. Combine finely chopped green onions, olive oil, chopped parsley, cider vinegar, chopped dill, salt, and pepper to make the dressing.
  4. Pour the dressing over the cooked green beans and toss gently to combine.
  5. Sprinkle with toasted coarsely chopped walnuts.
  6. Serve hot or cold.
