Ingredients

  • 5 Tbsp. fresh lemon juice
  • 1 Tbsp. lemon extract
  • 1 whole egg
  • 2 eggs, separated
  • 1/2 cup sugar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. cornstarch

Instructions

  1. Combine lemon rind, lemon juice, lemon extract, egg yolks, whole egg, 1/2 cup sugar, and cornstarch in a double boiler.
  2. Cook over hot water, stirring constantly until thickened (about 6 to 8 minutes).
  3. Remove from heat and transfer the mixture to a bowl to cool.
