Lemon-Pecan Squares

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1/3 c. powdered sugar
  • 1 Tbsp. grated lemon rind, divided
  • 3/4 c. margarine, softened
  • 1 (7 oz.) can flaked coconut
  • 1 (14 oz.) can sweetened condensed milk
  • 1 c. chopped pecans

Instructions

  1. Combine flour, sugar and 1 teaspoon lemon rind.
  2. Cut butter into this mixture with a pastry blender until mixture resembles coarse meal.
  3. Press firmly and evenly into an ungreased 13 x 9 x 2-inch pan.
  4. Bake at 350° for 15 minutes.
  5. Sprinkle coconut over baked layer; set aside.
  6. Combine condensed milk and remaining 2 teaspoons lemon rind.
  7. Drizzle evenly over coconut.
  8. Sprinkle pecans on top, pressing down slightly.
  9. Bake at 350° for 20 minutes.
  10. Cool on a wire rack.
  11. Cut into squares.
  12. Yields 3 dozen.
