Ingredients

  • 3 Tbsp. butter
  • 1 c. sugar
  • 2 egg yolks
  • 1 lemon (juice and rind)
  • 1 Tbsp. lemon rind
  • 3 Tbsp. flour
  • 1 c. milk

Instructions

  1. Cream butter and sugar well.
  2. Add lemon juice, lemon rind, egg yolks, and flour to the mixture.
  3. Beat until light and fluffy.
  4. Gradually add milk while beating.
  5. Beat egg whites until stiff peaks form.
  6. Gently fold egg whites into the lemon mixture.
  7. Pour the batter into a greased baking dish.
  8. Bake at 350°F (175°C) for 40 to 45 minutes.
  9. Serve slightly cooled or at room temperature.
