Ingredients

  • 1 cup fresh blueberries or canned blueberries, drained
  • 2 cups plus 2 tablespoons all-purpose flour, divided
  • 1/4 cup sugar
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons vegetable oil

Instructions

  1. Dredge blueberries in 2 tablespoons flour.
  2. Combine remaining 2 cups flour, sugar, baking powder, and salt in a bowl.
  3. In a separate bowl, beat together milk, egg, and vegetable oil.
  4. Add the wet ingredients to the dry ingredients and stir just until moistened.
  5. Fold in the dredged blueberries.
  6. Fill greased muffin cups two-thirds full.
  7. Bake at 400°F (200°C) for 20 to 25 minutes.
  8. Remove muffins from the pan immediately after baking.
