  • 1 garlic clove, peeled and mashed to a paste with salt

  • 1 1/2 to 2 cups chicken stock
  • grated peel of 1 lemon
  • juice of 2 lemons
  • salt and pepper to taste

Instructions

  1. In a heavy saucepan or Dutch oven, melt the butter over medium heat.
  2. Add the sliced onion and mashed garlic and cook until soft, about 6 minutes.
  3. Add the zucchini slices, cover, and cook until soft, about 10 to 15 minutes.
  4. Stir to prevent from browning.
  5. Add chicken stock, grated lemon peel, lemon juice, salt, and pepper.
  6. Bring to a simmer and cook for an additional 5 minutes.
  7. Puree the soup until smooth, then adjust seasoning as needed.
  8. Serve warm, garnished with additional lemon zest or fresh herbs if desired.
