  • 1 yellow squash
  • 1 zucchini
  • 2 cups fresh cauliflower flowerets

Instructions

  2. Slice the yellow squash and zucchini into 1/4-inch slices.
  3. Break the cauliflower into small floweret pieces.
  4. Place all vegetables in a large bowl.
  5. Pour 2 to 3 tablespoons of low-fat Italian dressing over the vegetables.
  6. Toss until all vegetables are well coated.
