Ingredients

  • 8 c. ground pears
  • 2 c. ground onion
  • 6 green bell peppers, ground
  • 6 red bell peppers, ground
  • 2 small hot red peppers
  • 1 medium jar chopped pimentos
  • 4 ground pickles (sweet, dill or bread and butter)
  • 3 tsp. dry mustard
  • 1 qt. red wine vinegar
  • 1/4 c. all-purpose flour
  • 1/4 tsp. turmeric
  • 1/2 Tbsp. salt
  • 1/2 tsp. ginger
  • 2 c. sugar (1 1/2 white and 1 1/2 brown)

Instructions

  1. Remove seeds from all fresh peppers.
  2. Mix all ingredients and stir well.
  3. Bring to a rolling boil over medium-high heat.
  4. Cook for 25 minutes.
  5. Have hot sterilized jars ready.
  6. Pack relish in hot jars and seal.
  7. Process jars for 5 minutes.
