Lennie's Soup is a hearty, flavorful black-eyed pea and smoked ham hock stew perfect for comforting family dinners and gatherings, rich in smoky and savory flavors.

Ingredients

  • 3 qt. water
  • 4 c. dried black-eyed peas
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 bay leaf
  • 2 or 3 large onions, cut in eighths
  • 2 lb. smoked ham hocks

Instructions

  1. Bring all ingredients to a boil.
  2. Reduce to simmer and cook about 2 or 3 hours or until tender.
  3. When done, remove meat and bones.
  4. Cut meat into bite-size pieces and return to the pot.
  5. Discard bones, skin, and fat.
  6. Freeze any remaining soup in single-serving containers for future meals.
  7. Serve with hot cornbread.
