Easter Egg Bake

- Preheat oven to 400°F.
- Generously grease a large ovenproof skillet or large shallow baking dish; set aside.
- Fry sausage in a skillet over medium-high heat, stirring constantly, until no longer pink.
- Drain and transfer sausage to a bowl.
- Wipe out the skillet. Add butter and melt over medium heat.
- Saute mushrooms and chopped red onion until soft but not brown.
- Remove from heat and stir in cooked sausage.
- Blend beaten eggs, milk, salt, pepper, oregano, chopped tomatoes, and shredded mozzarella cheese.
- Turn the mixture into the prepared dish.
- Bake until a knife inserted in the center comes out clean, about 30 to 35 minutes.
