Ingredients

  • 1 lb. ground pork sausage
  • 1 Tbsp. butter
  • 8 mushrooms, sliced
  • 12 eggs
  • 1 c. milk
  • 8 oz. mozzarella cheese, shredded
  • 2 medium tomatoes, peeled and chopped
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1/3 tsp. dried oregano leaves
  • 1 medium red onion, chopped

Instructions

  1. Preheat oven to 400°F.
  2. Generously grease a large ovenproof skillet or large shallow baking dish; set aside.
  3. Fry sausage in a skillet over medium-high heat, stirring constantly, until no longer pink.
  4. Drain and transfer sausage to a bowl.
  5. Wipe out the skillet. Add butter and melt over medium heat.
  6. Saute mushrooms and chopped red onion until soft but not brown.
  7. Remove from heat and stir in cooked sausage.
  8. Blend beaten eggs, milk, salt, pepper, oregano, chopped tomatoes, and shredded mozzarella cheese.
  9. Turn the mixture into the prepared dish.
  10. Bake until a knife inserted in the center comes out clean, about 30 to 35 minutes.
