Ingredients

  • 2 small packages apricot jello
  • 1 medium can crushed pineapple, drained
  • 1 small cottage cheese
  • 1 medium Cool Whip, thawed
  • 2 cups boiling water

Instructions

  1. Dissolve the apricot jello in 2 cups of boiling water and stir until fully dissolved.
  2. Allow the mixture to cool slightly.
  3. In a large bowl, combine the drained crushed pineapple and cottage cheese.
  4. Add the cooled jello mixture to the bowl and mix well.
  5. Fold in the thawed Cool Whip until evenly incorporated.
  6. Pour the mixture into a large rectangle dish and refrigerate until set, about 2-3 hours.
