Ingredients

  • 4 c. self-rising flour
  • 2 Tbsp. sugar
  • 1/4 tsp. baking soda
  • 4 c. nonfat buttermilk
  • 1/2 c. vegetable oil
  • 8 egg whites

Instructions

  1. Combine the self-rising flour, sugar, and baking soda in a large bowl.
  2. Add the buttermilk and vegetable oil to the dry ingredients and mix until well combined.
  3. Beat the egg whites until stiff peaks form.
  4. Gently fold the beaten egg whites into the batter until incorporated.
  5. Preheat your waffle iron and coat it with vegetable cooking spray.
  6. Pour batter onto the waffle iron and cook until golden brown.
  7. Repeat the process, spraying the waffle iron with cooking spray each time before adding more batter.
