"Lighten" Cornbread

Ingredients

  • 2 c. medium ground corn meal
  • 1 c. all-purpose flour
  • 1 pkg. dry yeast
  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 2 Tbsp. Mazola oil
  • 1 egg
  • lukewarm water

Instructions

  1. Mix dry ingredients in large mixing bowl.
  2. Add oil, egg and lukewarm water; mix well.
  3. Cover and set in a warm place for about 2 hours.
  4. Pour into a well-greased, high sided pan and allow to rise for 1 hour.
  5. Bake in 350° oven until golden brown.
  6. Yield: 8 servings.
