Ingredients

  • 8 lemons (rind and juice)
  • 1 lb. butter or oleo
  • 4 cups sugar
  • 16 eggs, well beaten

Instructions

  1. Grate finely only the yellow rind on all 8 lemons.
  2. Ream juice from all 8 lemons.
  3. Put the lemon rind, lemon juice, sugar, and butter or oleo into the top of a double boiler and stir until all sugar is dissolved.
  4. Bring the mixture to a boil and slowly add the beaten eggs, whisking constantly so eggs do not congeal.
  5. Stir until the mixture thickens like pudding.
  6. Remove from heat.
