- Grate finely only the yellow rind on all 8 lemons.
- Ream juice from all 8 lemons.
- Put the lemon rind, lemon juice, sugar, and butter or oleo into the top of a double boiler and stir until all sugar is dissolved.
- Bring the mixture to a boil and slowly add the beaten eggs, whisking constantly so eggs do not congeal.
- Stir until the mixture thickens like pudding.
- Remove from heat.
