Ingredients

  • 10 oz. frozen lima beans, thawed or fresh
  • 10 oz. frozen corn Niblets, thawed or fresh
  • 2 small tomatoes, thin sliced
  • 1 small onion, thin sliced
  • 1 clove garlic, crushed
  • 1 cup tomato juice

Instructions

  1. Place half of the lima beans in the bottom of a nonstick baking pan.
  2. Top with a layer of corn, then add half of the tomato slices, onion, and garlic.
  3. Repeat with the remaining lima beans and corn, ending with a layer of tomato slices on top.
  4. Pour tomato juice over all the layers.
  5. Cover the pan and bake at 350°F (175°C) for 40 minutes.
