Lime Pineapple Congealed Salad

A refreshing and creamy lime pineapple congealed salad with tropical flavors, perfect for potlucks, picnics, or holiday gatherings, combining tangy lime, sweet pineapple, and smooth Cool Whip.

Ingredients

  • 1 large box lime jello
  • 6 oz. cream cheese
  • 1 large can crushed pineapple, drained
  • 2 cups Cool Whip, thawed

Instructions

  1. Pour 1 cup of boiling water over the lime jello and stir until dissolved.
  2. Add cream cheese and blend with a mixer while it's still warm.
  3. Add 1 cup of ice and stir until melted.
  4. Stir in the drained, crushed pineapple.
  5. Let the mixture set in the refrigerator until it begins to congeal.
  6. Remove from the fridge and fold in the Cool Whip until well blended.
  7. Pour into a large congealed salad mold.
  8. Chill for several hours until ready to serve.
