Linguine Pesto

Ingredients

  • 1/2 c. pistachios
  • 1 1/2 tsp. basil
  • 1 1/2 tsp. parsley
  • 2 gloves garlic
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 c. olive oil
  • 1/2 c. grated Parmesan cheese
  • 2 Tbsp. butter
  • 1 lb. linguine noodles

Instructions

  1. Blend the pistachios, basil, parsley and garlic in a food processor until they form a paste. Add the next five ingredients. Cook linguine. Add butter and stir pesto into the noodles.
