Ingredients

  • 2 oz. ground hazelnuts
  • 2 eggs
  • 3 oz. butter
  • 3 oz. sugar
  • 8 oz. flour
  • grated lemon rind
  • red currant or raspberry jelly

Instructions

  1. Cream the butter, sugar, and eggs together.
  2. Add the flour, grated lemon rind, and ground hazelnuts to the mixture.
  3. Knead the dough for thirty minutes.
  4. Break off three-quarters of the dough and roll into a round about nine inches across and one inch high.
  5. Take a plate approximately eight inches across and press into the round to create an indentation of about half an inch.
  6. Place the pastry in a flan tin and spread it evenly with the red currant or raspberry jelly.
  7. Roll out the remaining pastry thinly and cut into strips.
  8. Arrange the strips in a lattice pattern across the top of the jam-filled pastry.
  9. Bake in a medium oven for one hour.
