- Cream the butter, sugar, and eggs together.
- Add the flour, grated lemon rind, and ground hazelnuts to the mixture.
- Knead the dough for thirty minutes.
- Break off three-quarters of the dough and roll into a round about nine inches across and one inch high.
- Take a plate approximately eight inches across and press into the round to create an indentation of about half an inch.
- Place the pastry in a flan tin and spread it evenly with the red currant or raspberry jelly.
- Roll out the remaining pastry thinly and cut into strips.
- Arrange the strips in a lattice pattern across the top of the jam-filled pastry.
- Bake in a medium oven for one hour.
