Ingredients

  • 2 lb. veal liver
  • 1 onion
  • 1/2 c. water
  • salt to taste
  • pepper to taste

Instructions

  1. Cut the veal liver into 3-inch squares.
  2. Season the liver pieces with salt and pepper.
  3. Roll the seasoned liver in flour to coat evenly.
  4. Pan-fry the liver in shortening until golden brown on both sides, turning only once.
  5. Remove the liver from the skillet and set aside.
  6. Fry the sliced onion in the drippings, stirring constantly until tender.
  7. Return the liver to the skillet and add water.
  8. Cover with a tight-fitting lid and cook for approximately 5 minutes, being careful not to overcook.
