Ingredients

  • 1/4 c. fine olive oil
  • 1/4 c. water
  • 1/4 c. wine or fruit vinegar
  • 1 clove garlic
  • 1 tsp. salt
  • 1 tsp. dried tarragon

Instructions

  1. Combine olive oil, water, vinegar, crushed garlic, salt, and dried tarragon in a jar.
  2. Shake well to blend all ingredients.
  3. Let stand for several hours to develop flavors.
  4. Shake again before using. For extra tang, add 1 teaspoon of Dijon mustard.
