Lois' Strawberry Pie

Ingredients

  • 1 pie crust, baked and cooled
  • 6 oz. cream cheese, softened
  • 1/2 c. powdered sugar
  • 1 1/4 c. water
  • 3/4 c. sugar
  • 1 qt. frozen strawberries
  • 2 Tbsp. flour
  • 1 (3 oz.) box strawberry Jell-O

Instructions

  1. Mix cream cheese and powdered sugar together thoroughly. Spread 1/2 of the cheese and sugar mixture over the bottom of the prepared pie crust.
  2. Set remaining cheese and sugar mixture aside. In a saucepan, mix flour and sugar together.
  3. Add water and whisk until mixed thoroughly.
  4. Cook over medium heat until thick and clear.
  5. Add strawberry Jell-O and remove from heat.
  6. Add frozen strawberries.
  7. Pour into pie crust and place in refrigerator.
  8. Once the pie has set, spread the remaining 1/2 of the cheese and sugar mixture over the top.
  9. Cover with Cool Whip and serve.
