Ingredients

  • graham cracker crust
  • 3 oz. sugar-free jello (cherry or lemon flavor)
  • 1/2 cup boiling water
  • 2 cups cottage cheese
  • 2 Tbsp. lemon juice
  • 8 oz. carton whipped topping

Instructions

  1. Prepare graham cracker crust according to package directions; omit sugar and use low calorie margarine where it calls for butter.
  2. Add 1/4 teaspoon cinnamon to the crust mixture.
  3. Press the crust mixture into a 10 x 10-inch square pan.
  4. Chill the crust or bake it for 5 minutes at 350°F (175°C).
  5. Dissolve the sugar-free jello in 1/2 cup boiling water.
  6. In a bowl, combine the cottage cheese and lemon juice until smooth.
  7. Mix the dissolved jello into the cottage cheese mixture.
  8. Fold in the whipped topping until well blended.
  9. Pour the filling over the prepared crust.
  10. Chill the cheesecake until set before serving.
