Ingredients

  • 1 1/3 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/4 cup cocoa powder
  • 1/3 cup butter
  • 2 cups mini chocolate chips
  • 3 (8 oz.) packages cream cheese
  • 1 (14 oz.) can sweetened condensed milk
  • 3 eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Line mini muffin tins with paper liners.
  3. Mix graham cracker crumbs, cocoa, sugar, and melted butter until combined.
  4. Press the crumb mixture into the bottoms of the paper-lined cups.
  5. Melt 1 cup of mini chocolate chips.
  6. In a large bowl, beat cream cheese until fluffy.
  7. Gradually add sweetened condensed milk and melted chips, beating until smooth.
  8. Add eggs one at a time, mixing well after each addition.
  9. Stir in vanilla extract.
  10. Spoon the filling into the prepared cups, filling each almost to the top.
  11. Sprinkle remaining mini chocolate chips on top of each cheesecake.
  12. Bake for 15 minutes, then remove from oven and let cool.
  13. These cheesecakes freeze well for later enjoyment.
