- Preheat oven to 300°F (150°C).
- Line mini muffin tins with paper liners.
- Mix graham cracker crumbs, cocoa, sugar, and melted butter until combined.
- Press the crumb mixture into the bottoms of the paper-lined cups.
- Melt 1 cup of mini chocolate chips.
- In a large bowl, beat cream cheese until fluffy.
- Gradually add sweetened condensed milk and melted chips, beating until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract.
- Spoon the filling into the prepared cups, filling each almost to the top.
- Sprinkle remaining mini chocolate chips on top of each cheesecake.
- Bake for 15 minutes, then remove from oven and let cool.
