Ingredients

  • 1 qt low-fat milk
  • 1 Tbsp vanilla
  • 1/2 to 3/4 cup sugar
  • 2 Tbsp cornstarch
  • 4 egg yolks

Instructions

  1. Heat the low-fat milk to scalding.
  2. Beat the egg yolks and slowly add 3 to 4 tablespoons of hot milk to temper them.
  3. Stir the yolk mixture and then pour it back into the hot milk, stirring constantly until it thickens.
  4. After thickening, add 1/4 cup water to 2 tablespoons cornstarch and stir into the yolks, then add to the custard.
  5. Remove from heat and add vanilla extract.
  6. Stiffly beat the egg whites and fold them into the custard mixture.
  7. Do not boil the custard after adding the egg whites to prevent curdling.
