Ingredients

  • 4 boneless and skinless chicken breast halves
  • 1/4 cup Egg Beaters
  • 1/2 cup cracker meal
  • 1 teaspoon minced garlic
  • 2 tablespoons fat-free chicken broth
  • 1/4 cup Marsala wine
  • 1 packet chicken bouillon
  • dash ground pepper
  • 2 tablespoons chopped parsley

Instructions

  1. Pound chicken breasts to 1/4-inch thickness.
  2. Dip chicken breasts in Egg Beaters, then coat with crushed cracker meal.
  3. Set coated chicken aside.
  4. In a skillet, cook the chicken until browned and cooked through.
  5. Add minced garlic and cook for 1 minute.
  6. Pour in chicken broth, Marsala wine, and sprinkle with chicken bouillon.
  7. Simmer until sauce thickens slightly.
  8. Season with ground pepper.
  9. Garnish with chopped parsley and serve.
