A hearty low-fat casserole featuring lean ground beef, mixed vegetables, and creamy mashed potatoes, perfect for a comforting yet healthy family meal.

Ingredients

  • 3/4 lb. very lean ground beef
  • 8 oz. frozen mixed vegetables
  • 12 oz. mashed potatoes
  • 1 Tbsp. cornstarch or flour

Instructions

  1. Mix ground beef with a fork to separate it in the bottom of the casserole dish.
  2. Sprinkle cornstarch or flour lightly over the beef layer.
  3. Spread frozen mixed vegetables over the beef.
  4. Add enough water to come halfway up on the beef layer.
  5. Spread mashed potatoes over the vegetables, using a cake decorator to make decorative patterns on top.
  6. Cook in the microwave for 5 minutes, then transfer to an oven preheated to 400°F to brown the top of the potatoes.
