Low-Fat Raisin Bread

Ingredients

  • 3 1/2 cups flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 2 teaspoons cinnamon
  • 1 cup raisins
  • 1/4 teaspoon salt
  • 1/2 cup applesauce
  • 1/2 teaspoon lemon, rind of, grated
  • 1 1/4 cups skim milk, at room temperature
  • 1 teaspoon vanilla
  • 1 egg white, whipped

Instructions

  1. Preheat oven at 350.
  2. Prepare 2 bread pans with cooking spray and flour.
  3. In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In another mixing bowl, combine applesauce, raisins, lemon peel, milk, vanilla, and egg white.
  5. Mix dry ingredients with wet ingredients just until moistened.
  6. Pour batter into prepared pan (s).
  7. Bake for 1 hour.
