Ingredients

  • 1 c. diced chicken
  • 1 can cream of chicken soup
  • 2/3 c. mayonnaise
  • 1 c. cooked rice
  • 2/3 c. diced celery
  • 2 Tbsp. minced onion
  • 2 tsp. lemon juice
  • 2 hard-cooked eggs, diced
  • 1 c. cornflake crumbs or crushed potato chips
  • 1/2 c. slivered almonds

Instructions

  1. Mix all but crumbs and almonds and put in a 9 x 13-inch dish (do not pack down).
  2. Top with crumbs and almonds (almonds may be lightly browned first in 1 tablespoon butter if desired).
  3. Bake for 30 minutes at 325°.
  4. May substitute turkey, tuna, lobster or crabmeat for chicken.
