Ingredients

  • 1/4 cup sugar
  • 1 12-oz can evaporated skim milk
  • 1/2 cup skim milk
  • 3/4 cup egg substitute
  • 1/4 cup sugar
  • 1/8 tsp salt

Instructions

  1. Sprinkle 1/4 cup sugar into a heavy saucepan.
  2. Place over medium heat, cooking, stirring constantly until sugar melts and syrup is light golden brown.
  3. Pour syrup into 6-oz. custard cups and let cool.
  4. Combine evaporated skim milk and skim milk in a medium saucepan and heat until bubbles form around edges of the pan.
  5. Combine egg substitute, 1/4 cup sugar, and almond extract in a bowl.
  6. Beat well to combine.
  7. Gradually stir about 1 cup hot milk into the egg mixture.
  8. Add the remaining milk, stirring constantly.
  9. Pour the mixture evenly into the custard cups.
  10. Cover each with aluminum foil.
  11. Place custard cups in a shallow pan and pour hot water to a depth of 1 inch into the pan.
  12. Bake at 325°F for 25 minutes or until a knife inserted near the center comes out clean.
  13. Remove cups from water and chill for at least 4 hours.
  14. To serve, loosen edges of custard with a spatula and invert onto plates.
  15. Arrange assorted fresh fruits around the sides of the custards.
