Ingredients

  • 1 cup butter or lard
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 3 cups enriched flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons vinegar
  • 2 (3 3/4 oz.) packages butterscotch pudding and pie filling
  • 1 cup chopped pecans
  • 1 (6 oz.) package butterscotch morsels

Instructions

  1. Cream together butter or lard and dry pudding until fluffy. Beat in brown sugar, eggs, and vinegar.
  2. Stir in flour, baking powder, baking soda, and salt.
  3. Fold in pecans and butterscotch morsels.
  4. Drop by teaspoonfuls about walnut size onto greased baking sheets and flatten slightly with a wet fork.
  5. Bake at 350°F (175°C) for about 10 to 12 minutes.
