  • 4 egg yolks, beaten

  • 4 egg whites
  • 1/2 cup sugar
  • 1/2 cup whipping cream
  • 1 (9-inch) baked pie shell
  • lime slices for garnish

Instructions

  1. Soften gelatin in cold water in the top of a double boiler.
  2. Add a dash of salt and beaten egg yolks; cook and stir over hot (not boiling) water until mixture is slightly thickened.
  3. Remove from heat and stir in limeade concentrate and a few drops of green food coloring.
  4. Chill, stirring occasionally, until mixture mounds slightly when spooned.
  5. Beat egg whites until soft peaks form.
  6. Gradually add sugar, beating to stiff peaks.
  7. Fold in the gelatin mixture and whipped cream.
  8. Add a few drops of green food coloring.
  9. Pile into the cooled pie shell.
  10. Chill until firm.
  11. Top with whipped cream, lime slices, and optional pomegranate seeds.
