Lutefisk pudding offers a unique blend of tender fish and creamy rice, seasoned with almond and complemented by rich melted butter, perfect for traditional Scandinavian or holiday dinners.

Ingredients

  • 3 lb. cooked lutefish
  • 3 c. cooked rice
  • 3 egg yolks
  • 3 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. almond extract
  • 3 Tbsp. butter

Instructions

  1. Clean and wash the cooked lutefisk well.
  2. Put the fish, skin side up, in a colander.
  3. Place the colander in salted water, using 1/3 cup salt to 2 quarts water, in a large kettle.
  4. Simmer the fish until tender, usually about 10 to 15 minutes, if you want it to be firm.
  5. Remove the colander and drain the fish over the sink.
  6. Place the fish on a large platter and serve with melted butter.
