Ingredients
- 1 unbaked deep dish pie shell ⓘ
- 8 oz Swiss cheese, sliced into 1/4-inch slices ⓘ
- 8 oz lobster chunks, quartered ⓘ
- 1 1/2 cups light cream ⓘ
- 4 eggs ⓘ
- 1/4 teaspoon nutmeg ⓘ
- 1/2 teaspoon salt ⓘ
- pinch of pepper ⓘ
- pinch of cayenne pepper
- 1 tablespoon all-purpose flour ⓘ
- 2 tablespoons melted butter
- 2 tablespoons dry sherry ⓘ
Instructions
- Line the unbaked deep dish pie shell with Swiss cheese slices.
- Layer the lobster chunks over the cheese in the pie shell.
- In a bowl, combine the light cream, beaten eggs, nutmeg, salt, pepper, cayenne pepper, and flour; mix well with a wire whisk.
- Add the melted butter and dry sherry to the mixture and stir to combine.
- Pour the mixture into the prepared pie shell over the lobster and cheese.
- Bake at 375°F (190°C) for 40 minutes or until the top is browned and the center is set.
- Let the quiche stand for 20 minutes before serving.
