Ingredients

  • 1 unbaked deep dish pie shell
  • 8 oz Swiss cheese, sliced into 1/4-inch slices
  • 8 oz lobster chunks, quartered
  • 1 1/2 cups light cream
  • 4 eggs
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • pinch of pepper
  • pinch of cayenne pepper
  • 1 tablespoon all-purpose flour
  • 2 tablespoons melted butter
  • 2 tablespoons dry sherry

Instructions

  1. Line the unbaked deep dish pie shell with Swiss cheese slices.
  2. Layer the lobster chunks over the cheese in the pie shell.
  3. In a bowl, combine the light cream, beaten eggs, nutmeg, salt, pepper, cayenne pepper, and flour; mix well with a wire whisk.
  4. Add the melted butter and dry sherry to the mixture and stir to combine.
  5. Pour the mixture into the prepared pie shell over the lobster and cheese.
  6. Bake at 375°F (190°C) for 40 minutes or until the top is browned and the center is set.
  7. Let the quiche stand for 20 minutes before serving.
