Ingredients

  • 3 cups warm water
  • 1 tablespoon salt
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 3 tablespoons shortening
  • 2 dry yeast packages
  • 1 1/4 cups rye flour
  • 3 to 10 cups white flour
  • 2 cups raisins

Instructions

  1. Combine warm water, salt, brown sugar, molasses, shortening, and yeast in a large bowl.
  2. Stir together and let stand for 5 minutes or until yeast is bubbling and active.
  3. Stir in rye flour and enough white flour to form a dough that leaves the sides of the bowl.
  4. Knead the dough, working in raisins until it is smooth and elastic.
  5. Cover and let rise overnight in a cool place.
  6. Knead the dough again and shape into 3 loaves.
  7. Let the loaves rise in a warm place until they rise about 1 inch above the edge of the pans.
  8. Bake at 375°F for 25 minutes.
  9. Cool in the pans for 10 minutes before removing.
