- In a saucepan, combine chicken breasts, water, chopped onion, crushed ginger, salt, and 1/2 teaspoon curry powder.
- Cover and bring to a boil.
- Simmer for 20 minutes.
- Cool the chicken in the stock and then cut into chunks.
- In a bowl, mix mayonnaise, lemon juice, grated orange rind, and remaining curry powder to make the dressing.
- Add the chicken chunks, mandarin oranges, and lychee to the dressing.
- Toss gently to combine and serve chilled.
