Lychee Chicken Salad

Ingredients

  • 2 lb. chicken breasts
  • 1 1/2 c. water
  • 1 large onion
  • 1 small piece ginger
  • 1 1/2 tsp. curry powder
  • 2 cans mandarin oranges
  • 1 c. Lychee
  • 2/3 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/2 tsp. grated orange rind

Instructions

  1. In a saucepan, combine chicken breasts, water, chopped onion, crushed ginger, salt, and 1/2 teaspoon curry powder.
  2. Cover and bring to a boil.
  3. Simmer for 20 minutes.
  4. Cool the chicken in the stock and then cut into chunks.
  5. In a bowl, mix mayonnaise, lemon juice, grated orange rind, and remaining curry powder to make the dressing.
  6. Add the chicken chunks, mandarin oranges, and lychee to the dressing.
  7. Toss gently to combine and serve chilled.
