Ingredients

  • 7 oz. elbow macaroni
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 2 c. milk
  • 2 tsp. parsley flakes
  • 2 Tbsp. buttered bread crumbs
  • 1 c. shredded Colby cheese
  • 1 c. Cheddar cheese
  • 1 c. Monterey Jack cheese

Instructions

  1. Prepare elbow macaroni as package directs.
  2. Drain the cooked macaroni.
  3. In a medium saucepan, melt butter.
  4. Stir in flour and salt.
  5. Blend in milk and cook, stirring until thickened.
  6. Mix together the shredded cheeses.
  7. Reserve 1/4 cup of cheese mixture.
  8. Add remaining cheese to the sauce and stir until melted.
  9. Mix in the cooked macaroni and parsley flakes.
  10. Pour the mixture into a 2-quart casserole dish.
  11. Top with the reserved cheese and buttered bread crumbs.
  12. Bake at 350°F for 35 minutes.
  13. Garnish if desired.
