Ingredients

  • 1 lb. elbow macaroni
  • 1 lb. Ricotta cheese
  • 2 Tbsp. butter
  • 1/4 cup parsley, chopped
  • salt to taste
  • Parmesan cheese, grated

Instructions

  1. Cook macaroni in boiling water until tender; drain and return to pot.
  2. Mix Ricotta and parsley until smooth.
  3. Add the Ricotta mixture and butter to the cooked macaroni.
  4. Cover and simmer for 3 minutes.
  5. Serve hot, sprinkled with grated Parmesan cheese.
