Chewy, sweet macaroon squares with chocolate, coconut, and pecans, layered over graham crackers, perfect for satisfying dessert cravings or sharing at gatherings.

Ingredients

  • 4 egg whites
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 c. graham cracker crumbs
  • 1/2 c. semi-sweet chocolate bits
  • 1/2 c. flaked coconut
  • 1/2 c. chopped pecans
  • 1 tsp. vanilla
  • 9 graham crackers

Instructions

  1. Line the bottom of an 8-inch square pan with whole graham crackers.
  2. Beat egg whites and salt until foamy.
  3. Gradually add sugar, beating until stiff peaks form.
  4. Fold in the graham cracker crumbs, semi-sweet chocolate bits, flaked coconut, chopped pecans, and vanilla.
  5. Spread the meringue mixture over the graham crackers in the pan.
  6. Bake in a 350°F oven for 30 minutes.
  7. Allow to cool completely.
  8. Cut into squares and serve, optionally slightly warm with vanilla ice cream.
