Ingredients

  • 4 eggs
  • 1 1/2 cups sugar
  • 1 teaspoon grated lemon rind
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups butter, melted

Instructions

  1. Preheat oven to 450°F.
  2. Grease the madeleine mold pan.
  3. In a mixing bowl, beat the eggs and sugar until well combined.
  4. Add grated lemon rind and vanilla extract; mix thoroughly.
  5. Gradually fold in the all-purpose flour until just combined.
  6. Stir in the melted butter until the batter is smooth.
  7. Fill the madeleine molds with the batter using a pastry bag or spoon.
  8. Bake in the preheated oven for about 10 minutes or until golden brown.
  9. Remove from oven and carefully invert the molds to release the madeleines.
  10. Let cool slightly before serving.
