Malayan Chicken features tender chicken simmered in a tangy orange sauce with olives and water chestnuts, offering a flavorful and savory dish perfect for a hearty meal.

Ingredients

  • chicken parts
  • 1/4 c. vegetable oil
  • 1/2 c. orange juice
  • 1 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/8 tsp. garlic powder
  • 1 small can sliced water chestnuts
  • 1 c. coarse cut pitted ripe olives
  • 1 c. dry vermouth
  • 2 Tbsp. cornstarch

Instructions

  1. Heat vegetable oil in a skillet and brown the chicken parts completely.
  2. Reduce heat to low and add orange juice, ground ginger, salt, garlic powder, sliced water chestnuts, pitted ripe olives, and dry vermouth.
  3. Cover and simmer for 30 minutes until the chicken is fork tender.
  4. Remove the chicken to a warmed plate and thicken the pan juice by stirring in cornstarch mixed with water over medium-low heat for 4 minutes.
  5. Pour the thickened sauce over the chicken and serve.
