Ingredients

  • 1/2 cup shortening
  • 2 cups sugar
  • 3 cups self-rising flour
  • 4 eggs
  • 2 cups homemade heavy pear preserves
  • 1/2 cup raisins
  • 1/2 pound candied cherries
  • 1 teaspoon vanilla
  • 6 cups whole pecans

Instructions

  1. Prepare a tube cake pan with heavy brown paper and grease it well. Set aside about 1 cup of flour from the 3 cups measured.
  2. Reserve the raisins, cherries, preserves, and nuts separately.
  3. Mix the remaining ingredients to form a good batter.
  4. Dredge the reserved raisins, cherries, preserves, nuts, and the reserved flour together.
  5. Add this dredged mixture into the batter and fold gently.
  6. Pour the batter into the prepared tube cake pan.
  7. Bake at 200°F (93°C) until done, approximately 6 hours.
