Mandarin Pie

Ingredients

  • 1 packet unflavored gelatin
  • 2 Tbsp. cold water
  • 1/2 c. boiling water
  • 1/4 c. orange juice
  • 12 tsp. liquid artificial sweetener
  • 1 tsp. grated orange peel (optional)
  • 1 c. plain yogurt
  • 10 oz. unsweetened mandarin oranges, drained or 1 c. orange sections
  • 1 graham cracker crust for 9-inch pie plate
  • 1/2 pkg. cream cheese
  • cinnamon

Instructions

  1. Sprinkle gelatin over cold water in a medium mixing bowl.
  2. Let stand 5 minutes.
  3. Add boiling water, stirring until gelatin dissolves.
  4. Stir in orange juice, sweetener and orange peel.
  5. Beat in yogurt until thoroughly mixed.
  6. Refrigerate about 45 minutes, until partially set.
  7. Fold in orange sections.
  8. Taste for sweetener and add more, if desired.
  9. Pour into pie shell. Sprinkle lightly with cinnamon.
  10. Refrigerate about 4 hours, until set.
  11. Other fruits can be used, if desired.
  12. Contains 16 g carbohydrates, 3 g protein, 8 g fat and 148 calories.
