Ingredients

  • 2 c. skim milk
  • 1/3 c. long grain rice
  • 1 beaten egg yolk
  • 1/4 tsp. finely shredded orange peel
  • 2 Tbsp. orange juice
  • 2 Tbsp. sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 3 egg whites
  • 1/4 tsp. cream of tartar
  • 2 Tbsp. sugar

Instructions

  1. In a medium saucepan, combine the skim milk and long grain rice.
  2. Bring the mixture to a boil, then reduce heat; cook, covered, over low heat for 20 minutes, stirring occasionally.
  3. Uncover and cook the rice mixture for an additional 5 minutes.
