  11. Add cannellini beans and simmer for about 30 minutes, until thickened.
  12. Drain vegetables, saving the vegetable water.
  13. Add vegetables back to the bean sauce; slowly add water until the mixture is thick but soupy.
  14. Serve hot, topped with grated Parmesan cheese.
