Ingredients

  • 1 mango ripe, peeled, pitted
  • 1/4 cup diced red onion
  • 1 teaspoon minced garlic finely-
  • 1/2 teaspoon seeds finely-minced jalapeno pepper, removed
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon olive oil
  • salt to taste
  • freshly ground black pepper to taste

Instructions

  1. Cut the mango into 1/4-inch dice and place in a bowl.
  2. Add the remaining ingredients and fold together with a rubber spatula.
  3. Refrigerate, covered, for up to 3 hours before serving.
