Ingredients

  • 4 ripe mangoes, peeled and sliced
  • 1/4 cup lemon juice
  • 1 1/2 cups sugar
  • 4 egg yolks, beaten
  • 6 cups half and half

Instructions

  1. In a mixing bowl, whisk together the beaten egg yolks and sugar until well combined.
  2. Add the lemon juice and stir until smooth.
  3. In a blender, puree the peeled and sliced mangoes until smooth.
  4. Combine the mango puree with the lemon and egg mixture, stirring well.
  5. Pour the mixture into a large bowl and stir in the half and half until fully blended.
  6. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, approximately 15 minutes.
  7. Transfer the ice cream to a container and freeze for at least 4 hours or until firm.
